White Pie

Yield: One 35 cm pizza

Ingredients

  • 450 gr Pizza dough ball, slacked
  • 21 gr Olive oil
  • 7 gr Garlic, roasted and minced
  • 280 gr Afino by Grande Mozzarella, shredded
  • 280 gr Afino by Grande Ricotta

Directions

  1. Roll out dough ball to form pizza crust.
  2. Spread oil evenly over crust.
  3. Sprinkle garlic evenly over crust.
  4. Top with Afino by Grande Mozzarella.
  5. Add Afino by Grande Ricotta in small dollops across top of pizza.
  6. Bake at 260°C for 6 to 10 minutes in a deck oven or 5 to 7 minutes in an impingement oven until cheese is melted and crust is golden brown.

Variations

Ingredients

  • Instead of dolloping the Ricotta on top of pizza cheese, spread the Ricotta on the crust and then top with Mozzarella.
  • Top the pie with a signature blend of herbs like oregano, basil and/or parsley for extra flavor.
  • Add ingredients like sliced mushrooms or artichoke hearts to increase the taste and texture.
