Detroit style is the rising star of the pizza world. Baked in deep steel pans, this “upside-down” square pizza offers a unique combination of a light, airy crumb and a crunchy, caramelized cheese perimeter.

Shape: Rectangular, traditionally baked in 20×25 cm (8×10 inch) or 25x35cm (10×14 inch) inch blue steel pans.

Crust: Thick but light, similar to focaccia, with a fried bottom texture.

Texture: A signature edge of crispy, blackened cheese that runs along the sides.

Detroit style is a premium square that commands high prices. Because it’s baked in pans, it’s easier to train staff for consistency compared to hand-tossed styles. The striking visual look makes it a social media favorite that attracts new customers.

This style requires a cheese with high fat content that can melt down the sides of the pan to caramelize without burning. The cheese must withstand a longer bake time (12–15 minutes) and provide a buttery flavor that seeps into the dough.
