Whipped Ricotta with Hot Honey Brittle

Ingredients

  • Induction burner for brittle
  • 8 qt stainless steel saucepan
  • Silicone spatula
  • 2 ea silicone mats
  • 1 ea half sheet
  • Bowl and whisk for Afino by Grande Ricotta
  • Microplane for chocolate
  • Spoon for serving Afino by Grande Ricotta

Directions

  1. Roast sesame and amaranth seeds in sauce pan until golden brown
  2. Reserve seeds and wipe out sauce pan
  3. Place sugar and hot honey in sauce pan and stir constantly with spatula
  4. Allow sugar mixture to cook on low flame
  5. Constantly check for sugar temperature and proceed onto next step until it reaches 171°C
  6. Add salt and baking powder into sugar mixture and stir until dissolved
  7. Add seeds to sauce pan and mix well until homogenous
  8. Place brittle onto a greased silicone mat
  9. Place another silicone mat above brittle and press into a thin layer
  10. Allow brittle to cool and break into bite size pieces
  11. Place Afino by Grande Ricotta Sopraffina® and powdered sugar into a bowl and mix thoroughly
  12. Scoop Afino by Grande Ricotta Sopraffina® onto serving spoons
  13. Dress spoons with brittle and shaved chocolate
