Grilled Chicken Flatbread

Ingredients

  • 250 gr Pizza dough, stretched into 35 x 18 cm oblong shape
  • Olive oil, as needed
  • 60 gr Grilled chicken, diced
  • 15 g Bacon, cooked, crumbled
  • 110 gr Afino by Grande Mozzarella, shredded
  • 110 gr Spinach, fresh
  • 60 gr Avocado, fresh, chopped
  • 30 gr Tomatoes, chopped
  • 15 gr Afino by Grande Parmesan, grated
  • 15 gr Balsamic glaze

Directions

  1. Stretch pizza dough to oblong shape.
  2. Brush olive oil evenly over pizza dough. Top with 110 gr Afino by Grande Mozzarella shredded cheese, 60 gr chicken and 15 gr bacon.
  3. Bake at 127°C for 6 to 7 minutes in deck oven or 3 1/2 to 4 minutes in an impingement oven until cheese is melted and crust is golden brown.
  4. Top with 15 gr spinach, 60 gr avocado, 30 gr tomatoes and 15 gr Afino by Grande Parmesan grated. Slice.
  5. Drizzle 15 gr balsamic glaze over flatbread and serve.
