Artichoke and Sun-Dried Tomato Pizza

Yield: One 36 cm pizza

Ingredients

  • Pizza dough: 400 gr
  • Afino by Grande Ricotta: 170 gr
  • Afino by Grande Parmesan: 85 gr
  • Marinated artichokes: 150 gr
  • Chopped green onions: 30 gr
  • Sun-dried tomatoes: 50 gr
  • Salt and black pepper: to taste

Directions

  1. Roll out dough to form pizza crust.
  2. Stir together 170 gr Afino by Grande Ricotta, 90 gr artichokes, 15 gr sun-dried tomatoes and 15 gr green onions. Spread over dough to within 1.3 cm of edges.
  3. Top with 85 gr Parmesan.
  4. Bake at 260°C for six to nine minutes in a deck oven or five to seven minutes in an impingement oven until cheese is melted and the crust is golden brown.
